Ingredients

    3/4 cup Chelsea White Sugar
    1 cup bran
    1 cup flour
    4 tsp baking powder
    2 eggs
    100g butter, melted
    1/2 cup milk
    2 bananas, mashed

Method

    Preheat oven to 200°C. Mix all dry ingredients in a bowl. Beat eggs, melted butter and milk together with the bananas. Add dry ingredients and mix together to just combine.
    Spoon into greased muffin tins and bake for 10 – 15 minutes.

So easy, and delicious!

These were a hit with the whole family. I added in a 1/4 cup of chopped dried apricots, and next time I'm going to substitute the banana for canned peaches. Super easy to make and really tasty!

Made this recipe to rescue a couple of bananas that nobody wanted to eat and some bran flour that was about to expire lol. Turned out fantastic! I used only 2 teaspoons of baking powder, though.

I made a double batch and they were eaten so quickly I'm back to make another load. I reduced the sugar by half - that's just my preference.

My new favorite muffin recpie. I make these as Texas muffins and add half a cup of chocolate chips and take away 1/4 cup of sugar. I keep them in the freezer then take one out every morning and pop in in the microwave for breaky on the run.

Too sweet and too much baking powder in them which leaves an after taste. They need more flavour rather than just sugar and banana. Golden syrup would even help. Bit meh, wouldnt make again.

I’ve been using this recipe for years, they turn out great every time! Sometimes I add blueberries and then ice with lemon icing .

Great recipe- I used rice milk and margarine instead of milk and butter due to allergies in the family and they were a hit!

Brilliant muffins, can also add 1/2 c of chocolate chips or 1 c blueberries for an extra kick

Quick and easy and turns out great every time! Gave it a chocolate hit this time round with the addition of chocolate drops! even better!!

To make them healthier I substituted the flour for wholemeal flour, used youghurt and added sultanas. Made quite a beautiful muffin!
