Yes it is indeed a beautiful loaf and I soon found out that you really needed the required number of bananas, I had 2 large ones when I could've done with another one and when I was mixing it it seemed dry so I added a spot of buttermilk that I had and it moistened the batter up slightly and the finished loaf was so yum.
Grease a loaf tin (approximately 22-24cm x 13cm) and line with baking paper. Preheat oven to 180°C bake.
Peel bananas and place in a large bowl. Mash well.
Add all other ingredients and stir to combine. Pour into prepared loaf tin.
If adding the topping, place sliced banana halves on top and sprinkle with Chelsea Coffee Sugar Crystals.
Bake for 50-60 minutes, or until a skewer inserted in the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
Additional tips
Try adding a pinch of cinnamon for a different flavour
