Preheat your waffle maker properly: A hot waffle iron ensures even cooking and crispy waffles. If it isn’t hot enough, waffles can turn out pale and soft.
Don’t overfill the waffle maker: Too much batter can cause spills and uneven cooking. Use just enough to cover the centre without overflowing.
Avoid opening the waffle maker too soon: Lifting the lid too early can cause waffles to tear apart. Wait until the steam slows down before checking.

Sift the flour, baking powder, salt and Chelsea White Sugar together into a large bowl. Stir to combine.
Place the egg whites in a small bowl and beat until stiff.
In a jug, whisk together the egg yolks, milk and oil. Add to dry ingredients and whisk briefly until just smooth. Fold in the beaten egg whites.
Heat a waffle iron and cook waffles until golden brown. Serve warm with fresh fruit, cream and Chelsea Mapleor Honey Maple Flavoured Syrup.

Frequently asked questions
How do I keep Belgian waffles crispy?
To keep Belgian waffles crispy, place them on a wire rack in a warm oven (around 100°C) instead of stacking them. Avoid covering them, as steam will make them soft.
Why are my Belgian waffles not fluffy?
If your Belgian waffles are too dense, it could be due to overmixing the batter or not using enough leavening. For extra fluffiness, try folding in beaten egg whites or letting a yeast-based batter rest before cooking.
