- 2 cups Edmonds Standard Grade Flour (300g)
- 2 tsp Edmonds Baking Powder
- 1 tsp Edmonds Baking Soda
Additional tips
For an extra flavour kick, add some chopped crystallised ginger to the loaf. Feijoas and ginger are a great combination!

Great. Have made this 3 times already. Added raisins to the Feijoa mix in the pot and then walnuts to batter too and it was delicious.

Excellent recipe we love it with walnuts in it. My favourite and very easy to make. My suggestion would be to add the flour mix before the eggs to stop eggs cooking with using a warm start to the first ingrediants. We have had many from our feijoa tree, even tried to freeze a couple but they only lasted a couple days.

One thing to keep in mind is that a feijoa is a moist fruit so the only downside is that while cooking, it didn't 100% fully cook or maybe it did but the juice off the fruit moistened the surrounding area?? Unsure. But overall, the recipe isn't too sweet, and it's so good served while still warm with ice cream! Totally recommend.

Method
Preheat oven to 180°C bake and grease and/or line a loaf tin (approximately 22cm x 12cm).
Place feijoas, boiling water, Chelsea White Sugar and butter in a large saucepan. Simmer for 5 minutes, then set aside to cool for 5 minutes.
Mix in egg, flour, baking powder and baking soda.
Pour into prepared tin. Bake for 35-45 minutes, until loaf springs back when lightly pressed and a skewer inserted into the centre comes out clean.
Cool in tin for 10 minutes, then transfer to a wire rack to cool completely. Delicious sliced and spread with butter!
