I once used only baking powder and not baking soda...it was good but dry ...what’s the difference between baking soda and baking powder and what they really do.
CHELSEA SUGAR: Hi there, both baking powder and baking soda are leavening agents, which cause baked goods to rise. Baking soda reacts with acids in a recipe (i.e. buttermilk, brown sugar, lemon juice etc) neutralizing them and, in the process, creating carbon dioxide bubbles which cause the batter to rise. Baking powder is made from baking soda and a dry acid (usually cream of tartar), and reacts when combined with liquid and heat. Sometimes both baking soda and baking powder are required to give extra lift.
Can I use self raising flour or whole meal flour instead?
Chelsea Sugar:
You can substitute standard flour for wholemeal flour. Self raising flour would not be a suitable alternative considering the recipe advises using baking soda.
