This is my new 'go to' cake recipe. It's super quick and easy, especially if you have your own lemons and make your own yoghurt (I do my in an EasiYo yoghurt maker so always have some on hand). I peel the lemon zest with a potato peeler straight into the bowl of the food processor. Use the pulse function when mixing in the flour so it's just combined.NB It definitely takes more than 30 mins to bake. After 30 mins I give it a half turn and put the timer on for another 10-15 mins. You may need to put some tin foil on top for the last 10 mins to stop it browning too much. When cold, ice with a mixture of cream cheese, icing sugar, lemon juice and zest.
