So soooo yummy!!! Added an extra banana (based on reviews) I randomly added butter for some reason too. DON’T OVERMIX and the muffins will be beautiful. They were so easy to make too! Less than 10 minutes prep, I’m actually surprised how yummy these are for how simple it was. My 2 year old will be loving these when he wakes up in the morning. 🤍

This recipe was great! I followed the directions exactly, and they turned out amazing. The recipe made 12 large muffins (I filled them up to the top). It did take longer to bake - 20 minutes; but this resulted in perfectly cooked muffins with browned tops. Will definitely use this recipe again!
Preheat oven to 180°C bake / 160°C fan bake. Line a 12-hole regular size muffin tin with paper cases.
In a large bowl, lightly whisk the eggs, mashed bananas, milk, Chelsea Soft Brown Sugar and oil together.
Add flour, baking powder and chocolate chips. Mix until just combined (don't over mix - the ingredients should just be gently stirred together to combine).
Spoon into prepared tin (filling the cases nearly to the top for 12 big muffins) and bake for 15 - 18 minutes, until puffed and golden brown. Cool on a wire rack.
Delicious served warm, but will keep well in an airtight container for at least 3 days.
